Process

Grown in El Pital, Colombia, this washed Geisha from Henry Bonilla’s El Arrayan farm reflects his deep-rooted experience in coffee. Having taken over the farm from his father, Henry has expanded its potential by cultivating Geisha and refining processing techniques.

The cherries are selectively hand-harvested at peak ripeness before undergoing a careful double fermentation; 24 hours whole, followed by 32 hours post-pulping, then dried slowly under the sun for 15 days. The result is a beautifully balanced coffee that highlights the floral and delicate characteristics Geisha is known for.

Origin

Henry Bonilla acquired the El Arrayan farm from the moment of his father's death. From a very young age Henry was involved in all the work related to coffee on the farm, for this reason it was very easy to take the reins of the farm, however he wanted to go further by implementing technology in all processes and taking the risk of cultivating other varieties such as the Geisha, which begins in the month of May and lasts until July, has a wicked harvest from September to December.

Henry today, taking advantage of his knowledge and experience on the subject of coffee, advises several producers in the area, helping them to have a better structure in their financial and productive processes.
